Generic Green Goddess

I’ll often scroll on social media to find some inspiration for my latest health goal. Unfortunately, a few swipes through Instagram will go from “80/20 balance” to Orthorexia central.

 

(Orthorexia - overwhelming anxiety about consuming anything perceived as unhealthy, so their fixation on food quality can severely impact their physical and mental well-being)

 

Some topics in this particular doom-scroll include

  • Never use plastic anything ever

  • You’re body is full of microplastics

  • Tap water is poison

  • The air is poisoned

  • Bottled water is basically liquid plastic, and poison

  • Store-bought vegetables are sprayed with poison

  • The meat you eat is fed poison

  • There is lead in ALL of your clothes

 

Suddenly, the enthusiasm that brought you to the app is gone and you’re left paralyzed with fear. When will the cancer cells activate? What if you already have it? If I don’t eat enough fiber, will I get colon cancer? Any attempt at trying seems worthless. Grocery store trips leave you frustrated and anxious at every unknown word on the ingredient box

 

And just when you’re about to throw in the towel, you think of your own family. You realize that doing nothing has led to diabetes, hypertension, and a long list of chronic diseases. You realize that striving for perfection will always leave you disappointed. But something is better than nothing. There is no perfect solution to all the failures of the food systems that you alone can overcome. But you can start where you can. Let's go with spinach for now.

Recipe

Prep Time: 5 min

Cook Time: 10 min

 

Ingredients

  • 1 bag of fresh spinach

  • 2 cups of sliced portobello mushrooms

  • Olive oil

  • 2 tablespoons of minced garlic

  • Salt

  • Pepper Flakes

 

Instructions

  1. In a medium-sized pan, pour enough olive oil to cover the bottom of the pan

  2. Heat the olive oil over medium heat 

  3. Add mushrooms to the pan and let them cook for 5 minutes or until they start to darken

  4. Add minced garlic to the pan

  5. Add the spinach to the pan and cook until it wilts and shrinks

  6. Remove from the heat and add salt and pepper flakes to taste
